This is another Cowboy Rib-eye done on the Weber Kettle. I used the Cold Grate method with a Reverse Sear at the end of the cook. I put the steaks on and offset cooked opposite charcoal in the Slow N Sear for about 25 minutes at 300 degrees. After that, we brought the steaks inside and padded dry, apply a coat of olive oil, and apply black ground pepper. After putting in another 3/4 chimney of red hot charcoal, we put a blower on the charcoal to maximize the fire and heat. Next we put the steak on a cold grate and spun it around over the SnS with red hot coals. Each minute we turned it 180 spin and flipped the steak over back over the hot coals. Did this 4 times until the internal probed with the thermopop at 130 degrees. Then we took it up, brought it in, and let rest about 10 minutes. It was very juicy, and came out a medium rare.
