A large body of evidence suggests that processed meat is linked with cancer. Nitrites, used as preservatives in processed meats, can form cancer-causing nitrosamines when cooked or during digestion in the human colon. Nitrates, similar compounds found in plants, can also form nitrosamines but tend to form nitric oxide instead, due to the presence of vitamin C in the plants.
