If you have a surplus of tomatoes from your garden, you can make sun-dried tomatoes in the oven. Wash them good let them dry. Cut them into quarter inch slices lay them on a baking pan. Sprinkle with kosher salt evenly & put in a 250° oven for 5 to 7 hours keep checking on them to make sure they don’t burn. I flipped mine over about halfway through the cooking time then put them in a canning jar. Let them cool and add a couple of garlic, extra-virgin olive oil and oregano. You can store these in your refrigerator for up to two months.
