The GREAT Pumpkin & PERFECT Fall Brownies | Autumn Day in the Life in the Appalachian Mountains Fall is (almost) officially here y'all! When they bring out the pumpkins at all the mountain stores you know it's time! 😄👏🍂🍁 Today we get a gigantic pumpkin for our outdoor Fall display that will be coming soon with the return of George & Martha! We make some sausage & pepper Hoagies for a family visit supper, and the next day we make pumpkin brownies for the afternoon treat! Pumpkin Brownies Ingredients: For the Brownies 18 ounces brownie mix ¼ cup water ⅓ cup vegetable oil 1 large egg For the Pumpkin Layer 1/2 can pumpkin puree 6 ounces cream cheese, softened 3 TB granulated sugar 1 TB brown sugar 1 tablespoon pumpkin pie spice Directions: Preheat oven according to 325. Spray an 8×8-inch baking pan with nonstick spray. Set aside. In a medium bowl, make the brownie mix and set aside. In a medium bowl, mix the pumpkin, cream cheese, sugars, and pumpkin pie spice together until very smooth. Pour half of the brownie mix into the prepared pan and spread out so the entire bottom of the pan is covered. Spread pumpkin mixture over the top, and then cover the pumpkin with the rest of the brownie batter. Bake for 50-55 minutes. Allow brownies to cool for 1 hour before slicing to serve.
