Ghee is used mainly in Indian Cooking and in Ayurvedic Practices. Recently, Ghee has become quite popular for its healthy properties. Recipe 🥕Suji ka Upma 🥕 Suji ka Upma or Rava Upma - is a popular south Indian breakfast recipe made with semolina (rava). An easy, delicious and healthy recipe ready in minutes. Total Time - 20 minutes Serves -2 INGREDIENTS: Semolina- 1 cup, (rava /sooji) Onion -1 small, finely chopped Green chillies - 1, finely chopped Ginger - 1 tsp, grated French beans & Carrot - 1/2 cup, assorted, small diced Mustard seeds -1 tsp Asafoetida - a pinch Curry leaves - a sprig Urad dal - 1 tsp (split husked black lentil) Chana dal -1 tsp, (Split chickpeas) Cashew nuts -5-6 Sugar -3/4 tsp Ghee or Oil -2 tbsp Water - 3 cups Salt - as desired Lemon juice - 1/2 a tbsp (as needed) Coriander leaves for garnishing METHOD: In a kadhai or pan, heat 1/2 tbsp ghee or oil and roast 1 cup semolina or rava for 2 minutes on medium flame till slightly pale white/ white brown (Not brown*) in colour and releases earthy aroma. Transfer it on a plate and set aside. In another pan, heat another tsp of ghee. Add mustard seeds and allow it to splutter. Now, add asafoetida, chana dal and urad dal and sauté. Add chopped ginger, onion, curry leaves and fry for 30 seconds till slightly roasted. Add chopped vegetables, green chilli, cashew nuts and fry for another 30 seconds, until just golden. On high flame, add 3 cups of water and bring the veggies to a boil (for a minute) and ghee roasted rawa, lemon juice and sugar. Keep stirring in between on a low flame to avoid any lumps. Mix well twice or thrice and allow it to cook for a minute such that rava absorbs all the water. Switch off the flame and cover it with a lid for 2-3 minutes, this helps to steam the upma well.
