INGREDIENTS: Poached Plum Mojito: - 1 cup chopped Mirabelle plums - 50g sugar - 1/4 cup water - 3-5 tsp freshly squeezed lime juice - Zest from two limes - 1 tbsp finely chopped fresh mint - Small shapes silicone molds Base Coconut Sponge Cake: - 6 large egg whites + pinch of salt - 40g flour - 7g baking powder - 1 cup sugar - 120g coconut flakes - Baking pan 9 X 13 inch, round cookie cutter 2.75 inch Coconut Mousse: - 10g powder gelatin + ¼ cup cold water - 1 can coconut milk - 1 tbsp vanilla extract or vanilla beans - 150g cold heavy cream +1 tbsp confectioners’ sugar - 60ml water - 120g sugar - 2 egg whites - Dome molds 2.75 inch round (3 –Pk, 18-cups) Mirror Glaze: - 12g powder gelatin - 60ml cold water - 75ml water - 150g sugar - 150g glucose syrup - 100ml condensed milk - 150g white chocolate - White and gold yellow food coloring Decoration: Lime zest, fresh coconut Additional: Digital thermometer for baking #coconutmousse #dessert #mirrorcake
