Cooking a Whole Hog on a Stick Burner (Lang 88)

This is not really an instructional video, this is more of a weekend (last minute) hog we decided to cook. So I wasn't prepared to bring out my camera equipment and do a proper video. We cook our hogs simple, rub some olive oil on the skin, salt the meat side, and sometimes we make a fresh Cuban mojo marinade that we put to add that nice garlic and citrus flavors. My cook times are not set in stone, every hog is different, every cooker is different. I usually cook 3.5 - 4 hours on hogs under 80 lbs. Anything above that is usually 4-6 hours I cook from 285-375, again, it all depends on the hog. Hogs are something that you learn doing it yourself. No video will show you a perfect way to do something. It's all about trial and error. I will work on getting some full, detailed hog videos and show you what to do and make sure your hog doesn't burn, or come out raw in the middle.
