Masala curry | മസാല കറി | സദ്യ സ്പെഷ്യൽ മസാലക്കറി | Quick Recipe

Ingredients: Vegetables: 3 medium-sized potatoes, peeled and cut into chunks 150 grams cauliflower, cut into florets For the Masala Paste: 1 cup grated coconut 1 tsp fennel seeds 3 cardamom pods 1 tsp red chili powder 2 tsp coriander powder 1 tsp turmeric powder For the Curry: 2 tbsp coconut oil (for cooking) 1 tsp ginger-garlic paste 1 large onion, finely chopped 2 green chilies, slit 1 tomato, finely chopped 1 tsp pepper powder 1 tsp garam masala 1 handful of cooked or fresh green peas For Seasoning: 2 tsp coconut oil 5-10 small onions, chopped Curry leaves 1/4 tsp red chili powder Instructions: Roasting the Vegetables: Heat 3 tbsp of coconut oil in a pan. Add the potato chunks and cauliflower florets. Roast until the vegetables turn golden yellow. Transfer them to a plate. Preparing the Masala Paste: In the same pan, add 1 cup of grated coconut. Dry roast the coconut until it turns golden yellow. Add 1 tsp of fennel seeds and 3 cardamom pods. Continue roasting until fragrant. Add 1 tsp of red chili powder, 2 tsp of coriander powder, and 1 tsp of turmeric powder. Roast until the raw smell disappears. Allow the mixture to cool, then blend it into a smooth paste using a mixer jar. Set aside. Making the Curry: In a clean pan, heat 2 tbsp of coconut oil. Add 1 tsp of ginger-garlic paste and sauté for a minute. Add 1 large chopped onion and 2 slit green chilies. Cook until the onion turns golden yellow. Add 1 chopped tomato and cook until it becomes soft and forms a smooth paste. Stir in 1 tsp of pepper powder and 1 tsp of garam masala. Cook until the raw smell disappears. Add the roasted vegetables and a handful of cooked or fresh green peas. Cook for 5 minutes, allowing the masala to blend well with the veggies. Add the prepared coconut paste to the pan and mix well. Simmer the curry for 10-15 minutes on medium flame until the curry thickens and the flavors meld together. Preparing the Seasoning: In a small pan, heat 2 tsp of coconut oil. Add 5-10 chopped small onions and cook until they turn golden brown. Add a few curry leaves and 1/4 tsp of red chili powder. Turn off the heat. Pour this seasoning over the curry. Serve: Mix well before serving.
