Sharing a few days in my life. We visit Primark to buy a few bits, I make delicious meatball subs, oraganise my very untidy and dusty shelf for my recipe books, and bake a delicious raspberry cheesecake. I hope you enjoy watching :D Buy the NutriBullet Magic Kitchen Express, Food Processor & Chopper: https://amzn.to/3FQm1cq Meatball subs recipe: Ingredients for the meatballs: - 550g Lamb Mince - 1 Onion (finely chopped/processed) - 1 tablespoon Tomato Puree - 1 tablespoon Garlic & Ginger Paste - 1 teaspoon each Salt, Red Chilli Flakes, Garam Masala - 1 Egg - 3 tablespoons Plain Flour Ingredients for the sauce: - 1 tablespoon Olive Oil - 1 Onion (finely chopped/processed) - 1 tin Chopped Tomatoes (400g) - 1 tablespoon Garlic & Ginger Paste - 1/2 teaspoon Salt - 1/2 teaspoon Cayenne Pepper - 1 teaspoon Oregano - 1 tablespoon Lemon Juice Method: - Add the ingredients for the meatballs to a large mixing bowl and mix well using your hand or a spoon. - Shape into meatball shapes and lay on a foil-covered oven rack. - Bake @ 200c/180c fan for 12 mins or until golden brown. - To make the sauce, add the oil to a large pan on medium heat, stir in the onions and add the chopped tomatoes. Add the garlic & ginger paste, salt, spices and lemon juice and cook for a minute. - Add the meatballs to the tomato sauce and cook for a minute. - Use to make meatball subs or enjoy with spaghetti or whatever tickles your fancy :) No-bake Raspberry Cheesecake recipe Ingredients: - 16 Digestive Biscuits - 80g Unsalted Butter (melted) - 300ml Double Cream - 200g Soft Cheese - 75g Icing Sugar - 120g Raspberries Method: - Add the biscuits to a food processor and blitz to crumbs. - Add the butter and mix until fully combined. - Line a cake tin, and press the biscuit base evenly into the cake tin. Refrigerate for 30 mins to allow the base to set. - To make the cheesecake filling, add the cream, cheese and icing sugar to the food processor and blitz until smooth. - Add in the raspberries and mix depending on the texture you want for your cheesecake. - Pour the filling into the cake tin, and spread evenly using the back of a spoon. - Decorate with a few raspberries, and refrigerate ideally overnight.
