Douglas COOKS! Wagyu Steak in Cast Iron

Tonight I decided to spoil the Voice with a wagyu steak cooked to perfection in a cast iron and some wine, of course! The recipe below is for a perfect medium rare, but if you'd like to cook it up or down, simply add or subtract some of the timing suggestions. Check it out: Ingredients: PREMIUM steak Cooking oil (high smoke point oil such as vegetable or canola) 2 Tbsp butter 4 Garlic cloves (chopped) 1 Tbsp black truffle powder 1 Tbsp rosemary (fresh or dry) Salt Pepper Cooking process: Steak- To prep, chop the garlic into long, thin slices. Turn the cast iron on high heat. In the meantime, use a paper towel to pat the moisture off the steak. Now coat the steak with salt and pepper on all sides – make sure to be generous because a lot of it will come off during the cooking process. Check to see if the cast iron is hot enough by sprinkling a few drops of water into it. If the water evaporates rapidly, it’s ready. Add enough cooking oil to lightly glaze the entire skillet (about 2-3 tablespoons), then gently lay your steak into the cast iron away from your body. Let it sear for 2 min on each long side first, then using a tong sear the short sides for 30 seconds each. Change the stove temperature to low, and then add in the butter, garlic, black truffle powder, and rosemary on only one side of the skillet. Using an oven mitt, tilt the pan so that the butter, garlic, and rosemary fall to the bottom, then use a spoon to continuously baste the steak for 1 minute on each side. Remove the steak from the skillet and set aside to rest for 8-10 minutes.
