Ingredients 1 1/2 cups red kidney beans( It’s better to soak the peas overnight). Cook peas for about 1 hour or until tender. 3 cups rice( Use your favorite rice) 2 cups homemade coconut milk( canned is optional) Roughly 3 1/2 - 5 cups of water to cook peas ( cook peas until tender) Make sure to add enough water to cook peas and adjust where necessary. 1 small onion 4 garlic 3 stalk scallion Few sprigs of thyme 1 tsp grated ginger Few pimento berries All purpose seasoning ( seasoned pot to taste) You can lightly seasoned peas with a pinched of salt or all purpose to cook peas) this will give the peas some taste as they cook and then do a final seasoning once the peas are cook and after adding the coconut milk and fresh seasoning. In addition you can always allow the peas to cook in its natural state with just the garlic, onion and thyme without adding any salt/ seasoning in the beginning and then seasoned to taste once the peas are cook and once you’ve added the remaining fresh seasoning and coconut milk. 1 scotch bonnet pepper 1 tsp salt 1 tsp brown sugar (optional)
