Time: 1 hour 30 minutes serves for 4 people Ingredients: Lamb Ribs 1.5 kg (cut and clean) - For onion paste cooking oil for deep frying red onions 1 cup (sliced) cashew nuts half cup - For cooking oil 2 tbsp bay leaves 3 nos. dry red chilies 3 nos. cinnamon 2-inch black cardamom 1 no. mace 1 no. green cardamom 5 nos. turmeric powder 1 tsp ginger & garlic paste 1 tbsp red chili powder 1 tbsp Kashmiri chili powder 1 tsp coriander powder 1 tbsp tomato chopped 1 cup salt to taste garam masala powder 1 tsp fennel powder 1 tsp kasoori methi 1 tsp fresh coriander chopped ginger julienne green chilies 2 nos. lemon juice 2 tbsp Method: - Take 1.5 kg lamb ribs and cut the lamb ribs and set aside. - In a pan, add cooking oil, when oil is hot add sliced onions, and fry the onions till they are brown. Once the onions are brown, remove the kitchen paper. In the same oil, add cashew nuts and fry till golden. - Transfer the brown onions and cashew nuts to a blender. Blend into a smooth paste, and set the paste aside. - In the same pan, add cooking oil (oil in which onions were fried), add the whole spices, and saute them on low flame. - Add the lamb ribs and fry for 8 minutes on high flame. - Add turmeric and ginger garlic paste, and saute for 5 minutes on medium flame. Once the lamb ribs are seared add the powdered spices and saute for 5 minutes on medium flame. - Once the oil is nicely separated, saute the chopped tomatoes and salt to taste, and cook for 10 minutes on medium flame. - At this stage, no water is added, let the meat cook in its juices. - Now add garam masala powder, fennel powder, kasoori methi and mix all the spices with the masala. - Add the blended paste to the masala, and mix well. Mix the paste and cook for 5 minutes on medium flame. - Now put fresh coriander chopped, ginger julienne, green chilies, and lemon juice. Mix all the ingredients well with the masala. - Cover the lamb and cook for 45 minutes on low flame. - Open the lid, and your Lamb Masala is Ready. - Garnish with chopped coriander leaves. - Serve it hot with Rice or Roti. - THANKS for Watching.
