Cheeseburger Bowls - 1 lb ground beef 1 tsp garlic powder salt and pepper 1/2 - 1 tsp worcestershire sauce 1/2 - 1 tsp mustard; yellow or dijon 1/2 cup shredded cheddar cheese 1 head ice burg lettuce; chopped (or romaine) 2 roma tomatoes; diced 1/2 of a red onion; diced 1 cup shredded cheddar cheese any other burger topping you enjoy (bacon, pickles, avocado, etc) 1/2 cup fry sauce (or 1/4 cup mayo with 1/4 cup ketchup mixed together) Brown the meat with the spices, drain and remove from heat. Add cheese, worcestershire sauce and mustard, mix and let melt. Put lettuce, tomato, onion, and other toppings in a large bowl. Add meat, drizzle with fry sauce, mix and serve. Mexican Meatballs - 1 lb ground beef 10-12 oz red enchilada sauce 2 eggs; beaten 1/2 cup breadcrumbs 1/4 cup fresh cilantro; chopped 3 tsp minced garlic 2 TBSP minced dried onion 5 tsp taco seasoning salt and pepper Preheat oven to 350. Mix meat, 1/4 cup enchilada sauce, and remaining ingredients in large bowl. Don't over mix or you'll have tough meatballs. Spray a 13 x 9 baking dish with cooking spray. Ball up the meat and put in pan. Cover with remaining enchilada sauce. Cover with foil. Bake for 30. Remove foil and bake another 15 minutes. Cook until they reach 170 degrees. The higher the enchilada sauce is in the pan, the longer the meatballs will take to cook. Serve over rice with extra cilantro.
