Time: 1 hour. serves to 4 people. Ingredients: white fish 1 kg For Masala Paste garlic cloves 7 nos. fresh ginger 2-inch cumin seeds 1 tsp cloves 3 nos. cinnamon 1-inch black pepper 10 nos. whole red chilies 7 nos. Kashmiri chilies 10 nos. water half cup For Cooking cooking oil 2 tbsp chopped onions 1 cup tomato paste 2 tbsp turmeric powder 1 tsp red chilies powder 1 tbsp salt to taste water 1 cup tamarind pulp half cup dry kokum 6 nos. lemon juice 2 tbsp white sugar 1 tbsp green chilies 2 nos. Method: - Take any fish, for this recipe I have used barramundi / jitada fillets. You can use any fish of your choice. Clean the fish and cut it into big pieces. - To make a paste, take a blender and add garlic cloves, fresh ginger, cumin seeds, cloves 3 nos., cinnamon 1 inch, black pepper 10 nos., whole red chilies, Kashmiri chilies, and water. Add all the ingredients to a blender and blend into a smooth paste. - Take a pan and add cooking oil. When the oil is hot add chopped onions and fry for 10 minutes, on medium flame. Fry the onions till they are nice brown. - Once the onions are brown, add the blended masala paste. Fry the masala paste for 7 minutes, on medium flame. - Once the masala paste is cooked, add the tomato paste and fry for 7 minutes. on low flame. - When the tomato paste is cooked and you see the oil has separated add turmeric powder and red chili powder. Fry the powdered spices on low flame for 5 minutes. Add salt and mix well. - Now add water to the masala and mix well. You can add water as your requirement, how thin gravy you want. Add water and mix well, cook for 5 mins on high flame. - Add tamarind pulp, dry kokum, lemon juice, and sugar mix well, and cook for 5 minutes on medium flame. - Add fish to the gravy and mix well. coat the fish with the gravy and cook on a medium flame for 8 minutes. Add the green chilies and give a gentle mix. Cook the fish for 3 minutes. on low flame. - Goan Fish Ambotik is Ready. - Serve it hot with steamed rice or Goan poi.
