[蛋白吐司實驗] 加了它 味道口感更昇華? Add This to your Egg White Bread! | Keto Gluten-Free

💡台灣朋友請注意: 有酮學反映用烘焙坊 買的乾燥蛋白粉做不成功,而在蝦皮買的一個牌子叫”永銓蛋白粉”就成功了💪🏼 💡將蛋白打至極度挺立的狀態,是令麵包蓬鬆的關鍵。以最高速打發,一般需時10-15分鐘(視乎打蛋器速度或需20分鐘以上)。舉起打蛋器,檢查確保蛋白尖銳挺直不下垂。 💡乳清蛋白粉、豌豆蛋白粉、小麥蛋白粉等因含有脂肪,將無法打發起來,因此不適用於此食譜 💡不建議用其他生酮甜味劑代替阿洛酮糖,因為阿洛酮糖主要作用是使麵包更柔軟。 💡我是用4.5x7.5x4吋的麵包盤 💡蛋黃粉版所用的蛋白粉份量比燕麥纖維版較多,原因是蛋黃粉會將蛋白稍微消泡,如用同樣份量蛋白粉,烤出來效果不是太好 很感謝每一位喜歡我之前分享簡易生酮蛋白麵包食譜的朋友 :) 其實我最近一直嘗試在這個簡易麵包配方中,加入不同材料,看看能否再提升麵包的口感及味道。 而經過多次試驗,終於找到兩個我最喜歡、能令麵包更濕潤幼滑的配方(添加燕麥纖維或蛋黃粉),做法雖然比簡易版本複雜一點點,但也值得試試啊~現在跟大家分享我整個小實驗的過程 :) 我是參考了兩個自己超喜歡的生酮頻道@Indigo Nili 和@Keto Upgrade ,她們也曾分享在麵包中加入了這些材料,也有很不錯的效果。有興趣可看看她們的影片-    • 🥚Yolk Powder?? // Egg Bread Experimen...      • Low Carb/High Protein Bread Loaf Reci...   版本#1 - 燕麥纖維 (1:00) 材料: 3g 速發酵母 30克 溫水(40度以下) 1湯匙 菊粉(或5克糖) 60克 蛋清蛋白粉 https://amzn.to/3Q2xcF3 20克 阿洛酮糖 130克 溫水 鹽 少許 1茶匙 檸檬汁/蘋果醋(或0.5茶匙塔塔粉) **3克 燕麥纖維 做法: 1. 將速發酵母和菊粉加入 30 克溫水中。靜置 10 分鐘發酵,目的是確保酵母仍具有活性。 2. 在一個大碗中,加入酵母混合物、蛋清蛋白粉、阿洛酮糖、130 克溫水、鹽、檸檬汁和燕麥纖維。以最高速打發,直到形成非常非常堅挺的乾性發泡。 3. 將麵糊倒入麵包模中,靜置40分鐘發酵。 4. 160度烤30分鐘。然後關掉烤箱,讓麵包在裡面放置1小時定型。不要打開烤箱門。 *********************************************** 版本#2-蛋黃粉 (3:53) 材料: 3克 速發酵母 30克 溫水 1湯匙 菊粉(或5克糖) 120克 蛋清蛋白粉 https://amzn.to/3Q2xcF3 30克 阿洛酮糖 300克 溫水 鹽 少許 1茶匙 檸檬汁/蘋果醋(或0.5茶匙塔塔粉) **6克 蛋黃粉 做法: 1. 將速發酵母和菊粉加入 30 克溫水中。靜置 10 分鐘待發酵。 2. 在一個大碗中,加入酵母混合物、蛋清蛋白粉、阿洛酮糖、300 克溫水、鹽和檸檬汁。以最高速打發,直到蛋白形成非常非常堅挺的乾性發泡。 3. 加入蛋黃粉,以最低速打發與蛋白混合(蛋白會稍微消泡)。 3. 將麵糊倒入麵包模中,靜置20分鐘發酵。 4. 160度烤30分鐘。然後關掉烤箱,讓麵包在裡面放置1小時定型,期間不要打開烤箱門。 IG:   / ketofoodie.hk   **************************************************** Thank you to everyone of you who's tried making my Easiest Keto Egg White Bread and told me you've enjoyed it! I've been really keen to try adding various ingredients to the recipe to see if any of them would take the bread to the next level. And there you go - turns out the addition of egg yolk powder or oat fibre further enhances the flavours and texture of the bread, making it more moist ❤️ This is inspired by two of my most favourite keto channels @Indigo Nili and @Keto Upgrade who have also tested out some of these add-on ingredients. This is key to a fluffy bread loaf. 💡I don't recommend replacing allulose with other keto sweeteners as allulose helps a lot in giving the bread a softer texture. Version #1- Oat fibre (1:00) Ingredients- 3g Instant yeast 30g warm water (below 40C) 1 tbsp inulin (or 5g sugar) 60g egg white protein powder 20g allulose 130g warm water Pinch of salt 1 tsp lemon juice/apple cider vinegar (or 0.5tsp cream of tartar) **3g oat fibre Instructions- 1. Add instant yeast and inulin to 30g warm water. Set aside and let proof for 10 mins. 2. In a large bowl, add yeast mixture, egg white protein powder, allulose, 130g warm water, salt, lemon juice and oat fibre. Beat on high speed until very very stiff peaks form. 3. Transfer the batter into a bread mould, set aside for 40 mins for rising. 4. Bake at 160C for 30 mins. Then switch off the oven and leave the bread inside for 1 hour for setting. Do not open the oven door. *** *** *** *** *** *** *** Version #2- Egg yolk powder (3:53) Ingredients- 3g instant yeast 30g warm water 1 tbsp inulin (or 5g sugar) 120g egg white protein powder 30g allulose 300g warm water Pinch of salt 1 tsp lemon juice/apple cider vinegar (or 0.5tsp cream of tartar) **6g egg yolk powder Instructions- 1. Add instant yeast and inulin to 30g warm water. Set aside and let proof for 10 mins. 2. In a really large bowl, add yeast mixture, egg white protein powder, allulose, 300g warm water, salt and lemon juice. Beat on high speed until very very stiff peaks form. 3. Add egg yolk powder and blend it into the batter on very low speed (the egg whites will deflate a little). 3. Transfer the batter into a bread mould, set aside for 20 mins for rising. 4. Bake at 160C for 30 mins. Then switch off the oven and leave the bread inside for 1 hour for setting. Do not open the oven door.
