Anda Chanay Ka Salan | Chickpeas And Egg Curry Recipe | @Nishooskitchen Anda chanay (eggs & Chickpeas ) is a hearty and flavorful Pakistani & North Indian dish that combines the earthy taste of chickpeas with the richness of eggs. This protein-packed recipe features boiled eggs simmered in a spiced chickpea curry, creating a delicious and satisfying meal. It's perfect for a nutritious lunch or dinner, and pairs wonderfully with rice, roti, paratha or naan. Ingredients: 1 cup chickpeas soaked overnight, drained and rinsed 3-4 eggs 1/2 cup oil 1 large onion, finely chopped 1 cup tomato puree 1 tablespoon ginger-garlic paste 1 teaspoon cumin seeds 1 teaspoon turmeric powder 1 teaspoon red chili powder 1 teaspoon coriander powder 1 teaspoon garam masala Salt to taste Fresh coriander chopped for garnishing. Instructions: 1. Boil the Chickpeas and Eggs: soaked overnight chickpeas and cook them in a pressure cooker with enough water and a pinch of salt until they are soft (about 20-25 minutes). Boil the eggs in a pot for about 10 minutes until they are hard-boiled. Cool, peel, and set it aside. 2. Prepare the Curry Base: Heat oil in a large pan over medium heat. Add cumin seeds and let them splutter. Add the ginger-garlic paste and green chilies (if using). Sauté for a minute until the raw smell disappears. Add the chopped onions and sauté until they turn golden brown. Add the tomatoes puree and cook until the oil starts to separate from the masala. 3. Spice the Curry: Add turmeric powder, red chili powder, coriander powder, and salt. Mix well and cook for another 2-3 minutes. 4. Combine Chickpeas and Eggs: Add the cooked chickpeas to the pan and mix well with the spice mixture. Add about a cup of water (more or less depending on the desired consistency) and bring the curry to a simmer. Add boiled eggs to the curry. Let them simmer for 5-7 minutes so they absorb the flavors. 5. Finish and Garnish: Garnish with chopped fresh coriander. 6. Serve: Serve hot with rice, roti, paratha or naan.
