This week, The Democratic Republic of the Congo and their wonderfully unique chicken dish, Poulet a la Moambe. Recipe: Ingredients: 3-4 lbs of chicken cubed. 1/3 cups of red palm oil. 1 large yellow onion. 3 cloves of garlic minced. 6 oz can of tomato paste. 14.5 oz can of diced tomatoes. 1 in of grated ginger root. 1 teaspoon of red pepper flakes. ½ cup of natural peanut butter. 2 jalapenos for spice. 1 Red bell pepper. 1 cup of water. Rice Instructions: 1. Prepare by chopping onions, peeling garlic, grate ginger, chop bell pepper, and dicing jalapenos. Follow by cutting chicken into manageable cubes. 2. Heat dutch oven with palm oil on high until shimmering, add chicken to sear for 5 minutes until golden brown. Remove and set aside. 3. Start Rice cooker with 1-1.5 cups of rice. 4. Lower heat to medium-low and heat onions, adding garlic halfway through. 5. Add full can of tomato paste, stir constantly and cook for 3 minutes until mixture darkens. 6. Add can of diced tomatoes, minced ginger, red pepper flakes, water, salt, and return the chicken to the pot. 7. Bring to boil before cutting head down to low, simmer for 20 minutes. 8. Add peanut butter and simmer uncovered for 10 minutes. Serve. Poulet a la Moambe is a traditional dish from the Democratic Republic of the Congo, made with red palm oil, tomato paste, peanut butter, and a blend of spices.
