It really looks like some magical fairy turned a log from the forest into a big chocolate cake. A lot of people don’t realize that there are many kinds of buttercream icing, including swiss buttercream, which incorporates italian style meringue with butter to make a light and rich frosting. Today we’re making this chocolate yule log with candy meringue mushrooms and caramel moss, which although this looks like a hot complicated mess, it’s quite easy to make once you know how to put it together. And even if you mess it up, you can still impress everyone by saying it was a more natural style.
