For Wheat Nipattu recipe:    • Wheat Nippattu made from AASHIRVAAD W...   Atho Recipe : For Frying: Oil - ½ Cup Onion (thinly sliced) - 1 Cup Garlic (thinly sliced) - 8-10 Cloves To Grind: Roasted Peanuts - 2 tbsp Fried Gram - ¼ Cup Tamarind Pulp: Tamarind - 1 Lemon-sized portion Hot Water - ¾ Cup Salt Water: Salt - 2 tsp Water - ¼ Cup For Boiling Noodles: Water - As Needed Salt - As Needed Turmeric Powder - ½ tsp Noodles - 200 grams Oil - 2 tsp Other Toppings: Onion (thinly sliced) - 1 Cup Cabbage (thinly sliced) - 1 ½ Cup Thattai/Nipattu (crushed) - 4-5 nos Red Chilli Flakes - 1 tbsp Coriander Leaves - ½ Cup Lemon Juice - ½ no Cooking instructions: Tamarind Pulp 1. Soak the tamarind along with hot water for 15 minutes. Strain it to get the pulp. To Grind 1. Grind the roasted peanuts and fried gram together into a powder. Set aside. Salt Water 1. Mix the water and salt together until dissolved completely. Set aside for seasoning later. To Fry 1. Fry the onions in the oil until golden brown. Remove the onion from the pan. 2. Fry garlic in the same oil until golden brown. Remove the garlic along with the oil into a bowl and set aside. Boiling Noodles 1. Bring a pot of water to a boil. Add salt and turmeric. 2. Add the noodles and cook according to package instructions. 3. Strain the noodles and toss it with oil to prevent it from sticking. Mixing the Noodles 1. In a large bowl, add the noodles. Add a little bit of all the toppings according to your taste preference. 2. Adjust the taste accordingly and serve garnished with some fried onion, coriander leaves and more crushed Thattai. Cooking Tips: 1. This dish is an amalgamation of Burmese and Tamil cuisine. It was brought to Chennai by immigrants from Burma/present-day Myanmar. These influences are visible in the dish, which is often served along with stuffed Egg Bhejo and Plantain soup. € 2. For the street style noodle colour, you can add a pinch of Kesari/orange food colouring to the water while boiling the noodles. 3. You can add the quantity of the components/toppings as per your preference. There is no fixed quantity.
