Achari Tinday Recipe in English: Ingredients for achar masala: 1 tsp Fenugreek seeds 1 tsp Mustard seeds 8-10 Whole red chilies 1/2 tsp Nigella seeds 1/2 tsp Turmeric 1 tbsp Fennel seeds 1 tbsp Coriander seeds 1/2 tsp Salt 3-4 Kashmiri red chili Ingredients for apple gourd filling: 500g Apple gourd 1 cup Onion (grated) 2 tbsp Ginger garlic paste 1/2 tsp Turmeric powder Salt to taste 1 tsp Pickled chopped Ingredients for gravy: 4-5 tbsp Oil 1/4 tsp Cumin seeds 1/2 tsp Salt 1/2 tsp Chili powder 1 tbsp Achar masala 1/2 tsp Coriander powder Leftover of filling 1 cup Tomato puree 1 cup Onion (sliced) 1 tbsp Ginger garlic paste Directions for achar masala: Dry roast fenugreek seeds, mustard seeds, whole red chilies, fennel seeds, coriander seeds, Kashmiri red chili and grind. Then add nigella seeds, turmeric and salt in it. Your achar masala is ready. Directions for apple gourd filling: Peel apple gourd and cut them from top making a cross sign but keeping the base intact. In a bowl mix grated onion, ginger garlic paste, coriander powder, turmeric powder, salt and pickle. Fill this onion mixture in the cuts. Directions for gravy: Heat oil in a pan, add cumin seeds cook a bit, then add onion and cook until translucent. Add ginger garlic paste, salt, chili powder, achar masala, coriander powder, tomato puree, leftover of filling and cook for 2-3 minutes. Add apple gourd in masala, cover and cook on low flame for 10 to 20 minutes or until tender. Add water if required. Your achari tinday are ready to serve. Serve hot and enjoy. Preparation time: 20 minutes Cooking time: 20 minutes Serving: 5-6
