How to Set Up a Weber Smokey Joe as a Smoker

Let’s set up this little grill as a smoker. I have few smokers and grills, but I wanted to show you that you don’t need fancy grills and tools to get decent results. If you are thinking about getting into smoking meat, this would be a very affordable way to get started. First find a used Weber Smokey Joe online or on my gear page. Wrap two thirds of the charcoal grate in two layers of foil to help target the airflow towards the coals. Place a wire mesh on the other side if you are using lump charcoal. Separate the two zones with a piece of metal, I use the long end of a charcoal basket. Create a makeshift aluminum water pan and place it on the foil. Add charcoal and wood chips above the wire mesh. Light one of one end of the charcoal - I’m using a torch, but you can use lighter cubes or paper towels and alcohol. The coals will slowly burn to the other end during the cook. Insert your meat and probes. Put on your lid with your top and bottom vents wide open. When it is close to your target temp, close the top and bottom vents about half way to restrict airflow and stabilize the temp. You’ll have to adjust the vents throughout the cook, so keep a close eye on it. I usually leave the top vent alone and adjust the bottom vent in very small increments. If you find that your meat is drying out you can add water to your pan or spritz. One load of charcoal lasted about 4 hours, so you may have to refill it midway through the cook.
