Guideline for Beginner Manual Brewing : 1) Coffee Ratio : most common 1 gr coffee : 15 ml water means for every 1 gram of coffee we pour 15 ml of water. If you use 20 gr of coffee then the end result should be 300 ml of coffee (20 x 15 = 300) 2) Hot water temperature: 85 °C -95 °C | 185 °F - 203 °F NEVER use boiling water as it mya cause coffee burnt and taste bitter. Depending on coffee roast (light -medium -dark) you can use a colder or hotter water temperature you can bring out the desire flavors. 3) Coffee Grind Size: Medium It should feel like holding a sand or salt, but a little bit coarser. Recommended to grind the coffee just before brewing so we keep the coffee fresh and will taste better. Do not have to buy an expensive one, there are a lot of manual grinder choices which are cheaps and works just fine. 4) Technique: There are no perfect one when we use pour over, although there is some common methods that preferred. First we start the "blooming" process which is the releasing of CO2 gas in coffee for better coffee extraction. Then you can start pouring it with clockwise rotation or just center pouring until you reach target coffee volume. The most important one is to have consistency and balance extraction.
