First is the Penelope 9 Year Cask Strength Bourbon Whiskey, a marriage three different mash bills of Indiana and Kentucky Bourbons, it's a four grain, non-chill filtered Bourbon that comes in at 109 proof (even though Sara says 106 proof a few times in the episode). Next up is Penelope Rio, another blend of 3 Bourbon mash bills comprised of four grains finished first in honey barrels and then new Amburana barrels from Brazil. The finishing period was around two years in total. Rio is 98 proof and non chill-filtered.
