Andhra-Style Guttivankaya Curry Recipe Andhra Style Guttivankaya Curry | Spicy Brinjal Curry Recipe | Perfect with Rice & Parathas Description: Welcome back to Aroma Kitchen! Today, we’re making a traditional Andhra special – Guttivankaya Curry. This delicious stuffed brinjal (eggplant) curry is packed with bold flavors and spices. It’s the perfect pairing with parathas or bagara rice. Let’s dive into the ingredients and get cooking! Ingredients: For the Masala Paste: • 3 tbsp Peanuts • 1 tbsp Coriander Seeds (Dhaniya) • 1 tbsp Cumin Seeds (Jeera) • 2 Cinnamon Sticks • 10 Cloves • 5 Green Cardamom Pods (Elachi) • 2 Star Anise • 1/2 Nutmeg • 2 Mace • 2 tbsp White Sesame Seeds • 1 tbsp Turmeric Powder • 2 tbsp Red Chili Powder • Salt (to taste) • 1 Onion, chopped • Water (for blending) For the Curry: • 6-8 Small Brinjals (Eggplants) – cut with a “+” shape at the base • 1 tbsp Cumin Seeds (Jeera) • 3 Dried Red Chilies • Curry Leaves (a handful) • 3 tbsp Tamarind Juice • Oil (for frying) Preparation Steps: 1. Prepare the Masala Paste: • Heat a kadai (pan) and dry roast the peanuts until aromatic. • Add coriander seeds, cumin seeds, cinnamon sticks, cloves, cardamom, star anise, nutmeg, and mace. Fry for about 3 minutes. • Add the sesame seeds and continue roasting until they turn golden brown. • Transfer everything to a blender. Add roasted peanuts, turmeric powder, red chili powder, salt to taste, chopped onion, and a little water. Blend until you get a smooth, thick paste. 2. Prepare the Brinjals: • Wash the brinjals and make a + cut at the base, keeping them whole. • In the same pan, heat some oil and fry the brinjals until they turn golden brown. Set aside. 3. Cook the Curry: • In the same pan, add 1 tbsp cumin seeds, dried red chilies, and curry leaves. Fry until they release a nice aroma. • Add the fried brinjals and the prepared masala paste. Mix well. • Cook on medium flame for about 3 minutes. • Finally, add the tamarind juice, mix, and let the curry simmer until the oil starts separating.
