Easy Greek Chicken Gyros with Fresh Pita

The perfect dish to make the next time you are missing Greece: Healthy Chicken Gyros with Homemade Pita Bread. Tzatziki is the perfect topping for gyros. Try my Fresh and Easy Tzatziki Recipe available here:    • Simple & Healthy Greek Tzatziki   Pita Bread Ingredients: 1 cup All Purpose Flour 1 tsp Sugar 1 Package of Active Dry Yeast 1 cup Hot Water 2 tbsp Olive Oil 1 1/2 tsp Salt 1 3/4 cup All Purpose Flour Chicken Gyro Ingredients: 4 Boneless, Skinless Chicken Breasts (Sliced in 1cm Strips) 4 Garlic Cloves, Chopped Zest of One Lemon 1 tbsp Sweet Paprika 2 tsp Dried Oregano Salt and Pepper Lots of Olive Oil Pita Bread Steps: 1. Whisk together flour, sugar and yeast until combined. Then, add hot water, mix and let stand 20 mins until it is bubbling. 2. To bubbled yeast mixture, add olive oil and salt and gently mix. Add this to 1 3/4 cups of flour. Mix together until incorporated and then knead with your hands until smooth (5 to 6 minutes). 3. Roll dough into a ball and place it in a lightly oiled bowl. Cover with plastic wrap and set it aside in a warm, dark place to proof for 2 hours (under a towel near your stove). 4. After 2 hours, place dough onto a lightly floured surface and form it into a disk shape. Cut it into 8 even pieces and roll each piece into a ball. 5. Place dough balls into a parchment-lined baking sheet. Drizzle or brush each ball with olive oil, cover with plastic wrap, and let dough proof another 30 minutes before cooking. 6. Before cooking, pat dough balls into round shapes 1/4 inch thick. Set aside and let dough disks rest another 5 minutes. 7. Use a heavy-bottomed frying pan over medium-high heat to cook your pitas. Add a drizzle of olive oil in the pan. 8. Cook the first side for 3 minutes - flip when golden brown, cook the second side for 2 minutes, and then flip back to the first side for 30 seconds. This will help your pitas puff up. 9. Let your pita bread cool for a few minutes before enjoying. Drizzle pita bread with olive oil and a sprinkle of oregano for a beautiful presentation. Chicken Gyro Steps: 10. Dress chicken strips in garlic, lemon zest, seasonings and olive oil, cover with plastic wrap, and refrigerate at least one hour to marinate. 11. Cook your chicken in a heavy-bottom frying pan over medium-high heat. Do not over crowd the pan - this will make sure the chicken cooks quickly while getting nice brown, crispy edges. Assembling the Gyro: 12. Serve your chicken gyro with homemade bread and tzatziki sauce (link to my recipe available above).
