HOW TO MAKE MATURE CHRISTMAS CAKE WITH BRANDY.

1 kg of mixed dried fruit, Prunes, cherries, sultanas, raisins, currant. Zest and juice of 1 orange Zest and juice of 1 Lemon 150 brandy 250 softened butter 2oog light brown sugar 175g plain flour 100g ground almond 100g flakes almond 1/2 tsp baking powder 2 tsp mixed spice optional( mine I did used ginger powder.) 1 tsp ground cinnamon 1/4 tsp ground cloves 4 Eggs 1 tsp Vanilla extract In a pan put 1 kg mixed dried fruit then add the zest and juice of 1 orange and 1 lemon juice and the zest.Followed 150ml brandy,250g softenbutter and 200g light soft brown sugar. Bring to the boil over medium heatfor 5minutes. And leave to cool for 30mins. Heat the oven 150c. Line a deep 20cm cake tin with parchment paper. In separate bowl add the 175g plain flour,100g ground almonds 1/2tsp baking powder,2tsp ginger powder,1tsp ground cinnamon,1/4 ground cloves,100g flakes almonds,4 eggs,and 1tsp vanilla extract.Mix all together making sure there are no lumps of flour.Pour into your prepared baking tin and bake for 2 hours . When the cake is completely cook make a holes in it with barbeque stick and pour 2 tbsp of brandy and leave the cake to cool completely. And wrap with cling film.And feed the cake 1-2 tbsp of brandyevery foth night.
