Mix Ragi, Sooji, curd & salt in a mixing bowl. Mix well. 2. Gradually, add water & mix it till pouring consistency. 3. Cover it & let it rest for 15 minutes. NOTE:- If you want you can skip tempering & make plain Ragi Idli. 4. Heat oil in a tadka pan. Add mustard seeds & let it splutter. 5. Add urad dal & chana dal. Mix well. NOTE:- You can shallow fry cashew nuts first & transfer it in the batter. You can also add ginger, green chili & curry leaves. And , you can add grated carrot or bottle gourd or any of your favourite vegetables. 6. Add tempering tempering to the batter. Mix well. 7. Meanwhile, keep steamer ready for Idli. Grease Idli stand with oil. 8. Add cooking soda in the batter. Mix well in batter nicely & fast. 9. Pour Idli batter in the Idli stand till 3/4th. So that, Idli can rise. 10. Tap Idli stand gently to remove air bubbles, if any. 11. Keep Idli stand in the steamer. Cover it & let it cook for 15 minutes on high flame. 12. Let it cool down for 5 minutes. Take out Ragi Idli in the serving plate. Serve hot with Coconut Chatney & hot Sambhar.
