In ingredients that she procures from the valley, to the brigade of wazas (cooks) from Srinagar who have made Bengaluru their home! To enjoy a meal here, park aside all notions you may have of the cuisine based on the odd so-called Kashmiri dish you may have tasted on a menu here and there. For the fare here is anything but that. I opted for the maaz traem, a traditional celebratory meal and what followed was a procession of 12 dishes. From the initial methi maaz, soft and velvety tripe, served on a bed of rice, to a ghee-fried tabak maaz (ribs), dani phol (stewed lamb shanks) and a finely minced seekh kebab, to the hearty mains, rogan josh, the subtly flavoured sort you have never eaten before, rista (juicy meatballs), a comforting palak and razmah dal, creamy nadur (lotus stem) yakhni, marchewangan korma, the only searingly spicy dish of the lot, and gushtaba (meatballs stewed in yoghurt and dried mint), each preparation I found exquisite and subtly distinct in its flavour and taste. If you’re looking to try wazwan fare true to its roots, far removed from the ginger-garlic-chilli-cream infused heavy dishes that get passed off as Kashmiri elsewhere, definitely check out Sarposh restaurant and tea room in Bengaluru. Since this was a non vegetarian wazwan, we ordered the vegetarian dishes separately on a la carte basis, these are priced at Rs. 325.
