Know to prepare Mangalore Udupi Brahmin style Majjige Huli from Kumbalakai. A traditional recipe from my mother. Narrated in Kannada with English subtitles. Complete Recipe at my website - https://www.vegetarianrecipes.net/maj... #majjigehuli Ingredients: Ash Gourd or Kumbalakai - 3/4 Kg cut into big pieces Salt Jaggery - 1/2 tsp Fresh Curd or Buttermilk - 1 Cup Fresh Grated Coconut - 1 and 1/2 Cup Rice - 2 tsp Green Chillies - 3 Cumin Seeds / Jeera - 1 tsp Curry Leaves - 6-7 Coriander Leaves Seasoning Ingredients: Ghee / Coconut Oil - 1 tsp Mustard Seeds - 1 tsp Sun-dried curd Chilli - 1 Method: 1. Cook the cut Kumbalakai or Ash Gourd in a pressure cooker for 2 whistles and keep aside. Wash and soak 2 tsp Rice in a bowl for half an hour. 2. Add 1 and 1/2 Cup fresh grated Coconut to a mixer jar. Add 1 tsp Jeera or Cumin Seeds and 3 Green Chillies and grind to a coarse texture. 3. Swipe the sides of the jar and add little water and ground to a smooth paste and keep aside. 4. Now add cooked Ash Gourd or Kumbalakai in a vessel. Add Salt as per taste and add 1/2 tsp Jaggery and boil it for 5 minutes. 5. Add the ground paste to the vessel and add little water and boil the mixture for 7-8 minutes. 6. Add 6-7 Curry Leaves and mix well. 6. Now add 1 Cup Curd and boil the mixture for 5 minutes. Add finely chopped Coriander Leaves and mix well. Switch off the flame. 7. To a small frying pan, add 1 tsp Ghee or Coconut Oil. I used Ghee. 8. Once Ghee turns hot, add 1 tsp Mustard Seeds. Once the Mustard seeds splutter, add 1 cut Sun-dried Curd Chili and fry till it turns dark brown in color. Switch off the flame and transfer immediately to the Majjige Huli. Now Mangalore Udupi Brahmin Style Majjige Huli is ready to serve. Serve the Majjige Huli with hot Rice. Quality cooking wares that I love and recommend.
