Put lukewarm milk and instant dry yeast in a clean bowl and mix with a whisk to dissolve the yeast. When the yeast is well dissolved, add room temperature egg, sugar, salt, and softened unsalted butter in order and mix. And add bread flour in three portions. 2. Check the dough consistency by hand. Make a moist dough that is neither dry nor too sticky. 3. Transfer the dough to the workbench. Use the heels of your hands to push down and outward, lengthening and stretching the strands of gluten and dough fibers. Continue to knead, folding and turning the dough, until it is smooth and supple. This can take as little as 10-15 minutes. Take a small piece of dough and slowly stretch it out in opposite directions. If the dough becomes thin enough to appear semi-transparent before it tears, it’s done. Put the dough in a clean bowl and cover with a wet cotton cloth. Let dough proof until puffy and doubled in size in a warm place. 4. Transfer the dough after the proofing to the workbench. Press out the gas from the dough and shape it into a smooth ball of dough. Cover the top with cotton cloth or plastic wrap so that the top does not dry out, and wait for 20 minutes. 5. Remove the gas from the dough again. Divide the dough into 9 pieces. Shape the each dough into a smooth ball of dough. Transfer it to a tray and let dough rise until doubled in size in a warm place. 6. Bake for 12-14 minutes in an oven preheated to 175℃ (347℉). When the top starts to have an even brown color, take it out of the oven. (Bake time may vary depending on the oven specifications.) 7. Brush the surface well with melted butter.
