CREAM OF COCONUT Darcy O'Neil from Art of Drink Recipe -------------------- 400ml (1.7 cups) Coconut Milk 375g (1.75 cups) sugar (Cane Sugar optional) 1 Tbsp Coconut Milk Powder (optional) Pinch of Salt Combine the coconut powder and the sugar and mix well. To a pot add the coconut milk and the sugar/coconut mixture. Add the salt and heat gently until the sugar is dissolved. Do not boil. You know it's done when the syrup turns more translucent.
