Cavalcade & Friends: Hungarian Cheese Cake

Our friend Lisa stopped by with a recipe for Hungarian Cheese Cake that she had been wanting to try, so we gathered the ingredients and baked one up! Pre-heat oven to 300 degrees. 1 1/4 cups graham cracker crumbs 1/3 cup melted butter 1/4 cup sugar 1 tsp cinnamon Combine all in a bowl. Press into the bottom of a 9x13 baking dish. 1/2 lb. creamed cottage cheese 1 lb. dry cottage cheese (drained of as much liquid as possible) 4 eggs 1 cup sugar 1 cup sour cream 2 TBSP lemon juice 1/2 tsp lemon zest Put cottage cheese, sugar, and sour cream into a large mixing bowl and beat with electric mixer until smooth a creamy. Add eggs one at a time, beating after each addition. Add lemon juice and zest and mix. Pour mixture over cracker crumbs in baking dish and bake for 60 minutes at 300 degrees. 1 cup sour cream 1/4 cup powdered sugar 2 tsp vanilla 2 TBSP corn starch Whisk ingredients in bowl and spread on warm cake when you take it out of the oven. Put cake back with topping back in oven and bake for another 10 minutes. Allow cake to cool completely and chill before serving.
