Bharwa Pyaz Ki Sabji | Stuffed Onion Recipe | राजस्थान की प्रसिद्ध साबुत प्याज की सब्जी Bharwa pyaz ki sabji is a stuffed small onion recipe. Small onions are stuffed with a few Indian spices along with gram flour, shallow fried and cooked in tomato and curd gravy. This drooling stuffed onion sabji goes very well with all types of roti paratha, naan and rice. Let’s checkout the detailed recipe : Ingredients For Stuffing : Red Chili Powder - 1 to 1 ½ tsp Coriander Powder - 2 tsp Salt - 1/2 tsp Carom Seeds - 1/4 tsp Turmeric Powder - 1/4 tsp Asafetida - 1/8 tsp Dry Mango Powder - 1/2 to 1 tsp Gram flour ( Besan ) - 2 tsp Oil - 1 tsp For Sabji : Onion - 10 to 14 Small Onion Oil - 4 tbsp Green Chilly - 2 -3 Tomato - 2 medium Garlic - 5 Curd - 1 Cup Garam Masala - 1/2 tsp Cumin seeds - 1 tsp Fennel Seeds - 1/2 tsp Carom Seeds - 1/4 tsp Turmeric Powder - 1/4 tsp Salt - 1/4 tsp Kasuri Methi - 1 tsp Kashmiri Red Chili Powder - 1/4 tsp Method : 1. Add tomato, garlic, ginger and green chili in a grinder and prepare paste for gravy. Keep it aside. 2. Take small or medium sized onions and peel them. 3. Make two diagonally slits on onion from the layered side ( not from the side which was connected to roots ). 4. Make sure to not cut onions completely. The side which holds the onion layers will help in retaining the stuffing. 5. In a mixing bowl combine all the masala mentioned in the ingredient list for stuffing, mix well. 6. With the help of a knife or fingers gently stuff prepared masala mix into the slits of all the onions. 7. Keep the remaining masala aside. 8. Heat a shallow frying pan and add 3 to 4 tbsp oil, heat it on medium flame. Add stuffed onions and sliced green chilies and cook it for 2 to 4 mins while covering with a lid. Stir in between for equal cooking. 9. Take out fried onions and green chilies from the pan and keep it aside. 10. To prepare gravy : In the same oil add cumin seeds, fennel seeds and carom seeds and add prepared tomato paste, turmeric powder and very less salt, mix well and cook it until oil starts separating from gravy. 11. Add half cup of less sour curd and cook it with tomato gravy until fully cooked. 12. Once cooked add onions and chilies and cook it while covering the lid, stir occasionally. 13. Add Kashmiri red chili powder and garam masala and cook it for another half minute. 14. Turn off the heat and add green coriander. Transfer it to a serving bowl and Serve hot 15.
