Seed Kitchen Pad Thai Salad Makes 4 servings 6 cloves garlic chopped 2 inch ginger chopped ½ tsp crushed chili 2 tablespoons brown rice syrup 2 tablespoons tamarind paste 1 tablespoon rice vinegar 2 tablespoons tamari 2 tablespoon water 1 tablespoon paprika 12 oz dry brown rice noodles or raw kelp noodles 5 ea scallions sliced 8 oz beans sprout 4oz match stick carrots 1/4 cup crushed almonds or peanuts cilantro as need 8 ea lime or lemon wedges To make the sauce: 1. in a sauce pan, put the garlic, ginger,crushed chili, rice siyrup, tamarind paste, rice vinegar, tamari, water and paprika. 2. mix well and bring to simmer. Turn off and set aside. To make the salad: 1. Cook the rice noodles in boiling water for 8 minutes or al dente. 2. Drain, and cool off under running cold water and drain again 3. In a large bowl, put the rice noodles, scallions, beans sprout and carrots. Add the sauce and mix well. 4. Top with chopped almond, cilantro and lime.
