RECIPE: Tom Yum Soup (from the book in the Bundle) Ingredients: Ingredients A 2 cups water 2 stalks lemongrass, sliced 2-inch galangal, sliced 6 kaffir lime leaves 3 coriander roots Ingredients B 3 tablespoons lime juice 1 tablespoon soy sauce/coconut aminos/tamari 2 teaspoons coconut nectar 1 teaspoon miso 1 clove garlic, chopped 1/2 red onion, sliced 1/4 teaspoon white peppercorn 1 dried shiitake mushroom, ground 1/8 teaspoon salt Ingredients C 2 cups mushrooms - use a mix such as enoki, shimeji and shredded oyster mushrooms 2 tomatoes, medium dice 3 baby corn, sliced 1/2 red onion, sliced For garnish 1 tablespoon coriander leaves Method For broth Blend Ingredients A in blender till smooth. Strain liquid and discard remnants. Pour strained liquid back into blender. Add Ingredients B into blender as well and blend till smooth. To assemble Place Ingredients C into serving bowl. Pour broth into bowl. Garnish with coriander leaves. Serve with cauliflower rice.
