Pork Stir Fry

Ingredients: 1/2 pork tenderloin 200g cooked rice 1 red bell pepper 5 pieces of tender stem broccoli 1 carrot 3 spring onions 1 tbsp of soy sauce 1 tsp of sesame oil 2 eggs 2 cloves of garlic 1 tsp of grated ginger. 2 tbsp of vegetable oil Sriracha to serve For the marinade: 3 tbsp of light soy sauce 1 tbsp of sesame oil 1 tbsp of mirin 5 garlic cloves 1 thumb sized piece of ginger Method • Add all the ingredients for the marinade into a blender and blitz till smooth. Or if you don’t have a blender chop everything super fine. Place in a bowl and set aside. • Thinly slice your pork and add it into the marinade and leave to one side. • In the meantime you can get everything else prepped. So thinly slice your pepper, spring onions and carrot and grate the ginger and garlic. Trim the broccoli into bitesize pieces and now we're ready to start cooking. • Add the vegetable oil into a hot wok and add the pork, being careful not to pour all the marinade into the pan. • Fry for 2-3 minutes until the pork is nicely caramelised and cooked through. Remove from the pan and add in the broccoli, peppers and carrot. • After about a minute of cooking add in the ginger and garlic and cook for a further minute. • Then add in the cooked rice and pork and mix it through so its nicely combined. • In a separate frying pan, crack in two eggs and cook on a medium heat for 3 minutes. • Finish the rice with the soy sauce and sesame oil. Taste it and see if it needs any additional soy or salt. • For top presentation points. Lightly oil a bowl and pack in all the stir fried rice.
