In this video, I am making Pulut Kuning/ Kunyit with Rendang Ayam. 👩🏽‍🍳 "Pulut Kuning" is actually sticky rice cooked with a some turmeric & yellow food colouring. While "Rendang" is a dish of beef, chicken or other meat slow cooked in plenty of coconut milk and various spices until fairly dry. This duo is a very popular Malay recipe amongst Malaysians. Its also known to be one of the must be served dishes in almost every Malay Wedding,  Eid festival, thanksgiving fiest or any Malay traditional events here. What I am sharing today is a simplified version of my mom's way of making this dish. 👩🏾‍🦱❤ It is best to use country chicken (ayam kampung) for this recipe.🐔 However,  if you are unable to find any, it is okay to use normal store-bought chicken.🐓 Kindly refer to the key ingredients of this recipe & its measurements as listed below. INGREDIENTS for Rendang Ayam 🐓 ● 1/2kg chicken (with skin) ● 1/2 tsp turmeric ● 1 tsp salt ○ marinate & fry about 40% only ● 2 red onions ● 3 lemongrass stems ● 3 pc fresh turmeric ● 3 inch galangal ● 3 inch ginger ● 6 - 8 cloves garlic ● 3 - 5 fresh red chillies ● 2 - 4 red bird's eye chilli (optional) ● 10 - 15 dry red chillies (soaked in hot water for 15mins) ● water as needed ○ Blend into smooth paste ● 3-5 lime leaves ● 2 or 3 turmeric leaves ● 1 tbsp brown sugar ● salt to taste ● 1pc dry tamarind ● oil as needed ● 1 cup ++ light coconut milk ● 200ml thick coconut milk/ cream ● dry roasted grated coconut powder as needed (roasted over low flame until fragrant & brown; not too light/ too dark) INGREDIENTS for Pulut Kuning (Yellow Sticky Rice) ■ 1 cup glutinous rice ■ 1/2 tsp salt ■ 1/2 tsp sugar ■ turmeric as needed ■ 1 pc dry tamarind ■ 1 or 2 drop yellow food colouring Hope this video is worth watching.
