Iced Gingerbread Cookies 1 stick butter, room temperature 3/4 cup sugar 1/4 cup light brown sugar, packed 1 egg, room temperature 1/4 cup dark molasses 2 1/4 cups all-purpose flour 2 teaspoon ginger 1 teaspoon cinnamon 1 teaspoon baking soda 1/8 teaspoon salt Preheat oven to 350°. Line cookie sheets with parchment paper. Cream the butter, sugar, and light brown sugar in a large bowl. Mix in the egg and molasses on a medium speed until combined. Be sure to scrape the sides and bottom of the bowl as needed to make sure it’s blended well. Beat in the flour, ginger, cinnamon, baking soda, and salt. Use a cookie scoop and scoop the dough into approximately 12 cookie dough balls. Flatten the balls slightly. Bake for 11 to 12 minutes or until the cookies seem set in the center. Allow the cookies to cool completely before icing. Royal Icing 2 egg whites 3 cups powdered sugar, slightly packed 1 teaspoon vanilla Beat egg whites until frothy. Add the powdered sugar and vanilla.
