Reduce the heat to low, and gradually add the sorghum flour or pearl millet flour to the boiling water while stirring continuously to prevent lumps from forming. Continue stirring the mixture over low heat for about 10-15 minutes until the flour is cooked and the mixture thickens. The ukad should have a smooth consistency without any raw taste of flour. Once the ukad is cooked and thickened, add salt to taste and mix well. Remove the pot from the heat and let the ukad cool slightly. To serve, portion out the ukad into individual bowls. Drizzle some ghee or oil over the top of each serving. Ukad is traditionally enjoyed with raw onion slices, green chilies, and yogurt on the side. You can serve these accompaniments separately so that individuals can add them according to their preference. Mix the ukad with the accompaniments before eating.
