Lasagna Roll Ups - An Easy No Meat Meal - Make or Freeze Ahead for Faster Meals Later!

Spinach Lasagna Roll Ups 1 package lasagna noodles (about 15 noodles) 15 ounces Ricotta Cheese 4 cups shredded mozzarella 1/2 cup grated Parmesan cheese 2 eggs 16 ounce package fresh spinach 2 (24 ounces) jars marinara sauce 1/4 teaspoon salt 1/4 tablespoon pepper non-stick spray Preheat your oven to 400°.  Generously spray a 9“ x 13“ baking dish with nonstick spray. Set aside. Place the spinach in a large pot of boiling water for one to two minutes until it is wilted and cooked. Drain it thoroughly, squeezing out all of the water. Place the wilted spinach, ricotta cheese, shredded mozzarella, Parmesan cheese, eggs, and salt & pepper in a large bowl. Stir well to combine. Set aside.  Using a large pot of boiling water, cook the noodles according to the package directions. (I usually boil five or six at a time.) Lay the cooked noodles out on a clean surface and spread a few tablespoons of the cheese filling over each noodle, spreading it to cover the entire noodle. Roll up each noodle separately. Place a generous amount of marinara sauce in the bottom of your prepared baking dish. Line up your rolled noodles in the baking dish. Continue filling the noodles, rolling them up, and placing them in the baking dish until all the noodles are used or the baking dish is full.
