Sous Vide Beef Short Ribs

Sous Vide Beef Short Ribs from Joseph-Que Ingredients: 1 Rack of Beef Short Ribs (3-4 bones) A few shakes of Worcheshire Sauce 1/4-1/2 cup of your favorite All-Purpose or Beef Rub Instructions: Get Sous Vide system ready and set to 160°. Trim Beef Ribs and season by coating with Worcheshire sauce and then apply rub. Vacuum seal ribs tightly or use water displacement technique to remove air from ziploc bag. Lay ribs in sous vide for 24hrs. Remove ribs from Sous Vide after 25hrs and drop in Ice bath for 30mins. Once chilled you can proceed to smoker or place in fridge and smoke next day. Heat smoker to 225° and add your favorite wood for beef. We used Cherry and Mesquite. Once you remove ribs from pouch pat dry and reseason with same rub. Smoke ribs till 145° internal or roughly 2hrs. Remove from smoke and serve immediately.
