This is a test. We needed to know once and for all, which way makes a better brisket, wrapped or no wrap? We used two identical sized USDA Prime Briskets and cooked them side by side. Once they hit the stall, we wrapped one in butchers paper and let one continue smoking without wrapping. Did it make a difference? Was one more tender and juicier than the other?
