Kimchi Jjim / Braised Kimchi

Kimchi jjim is a classic Korean dish. Very few ingredients are used in this dish. Use aged sour kimchi and good-quality pork. After a long time of braising, the meat becomes tender and juicy, absorbing just the right amount of flavor from the Kimchi broth. This kimchi braised dish tastes irresistible! ------------------------------------------------------------------------------------------------------------------------------------------------------ Ingredients 500g old(sour) kimchi or kimchi fermented in the fridge for about 3 weeks 300g pork belly 1/2 onion 2 stalks green onion 2 cloves garlic 1/2cup kimchi juice, a liquid from the kimchi 1 1/2 cups water 1 tablespoon sesame oil Marinate for pork 1 tablespoon mirin 1/2 tablespoon doenjang, Korean soybean paste 2/3 tablespoon gochujang, Korean chili paste Instructions 1. Cut the pork into one-inch thick. 2. Make a marinade directly to the meat. Add one tablespoon of mirin, a half tablespoon of doenjang (Korean soybean paste), and gochujang(Korean chili paste) to pork. Then mix thoroughly. Set it aside for 30 minutes. 3. Slice green onion. Chop the garlic. Thinly slice the chili. 4. Cut the kimchi into big bite-sized pieces. Add sesame oil to the pot and heat it over medium heat. Place marinated pork into the hot pot. Add sliced onion and chili. Assemble kimchi on top. Add onion, scallion, and minced garlic. Pour one cup of kimchi juice and one and a half cups of water. Sprinkle gochugaru, Korean and chili flakes. 5. Lower the heat to a medium-low and put the lid on the pot. Cook it for about 40 to 50 minutes. 6. Turn off the heat. Scoop the kimchi jjim into a bowl and serve warm with cooked rice.
