Try this Punjabi sukhi arbi ki sabzi Ingredients Oil - for deep frying Arbi (colocasia/taro root) - 500 grams Besan - 1 katori/cup Onions, medium sized, chopped & leaves seperated - 5 Bell peppers, chopped - 3 Garlic, grated - 2 tbsp Salt - 1 tsp Red chilli pepper - 1/2 tsp Garam masala - 1/2 tsp Coriander powder - 1 tsp Optional Ingredients Soya sauce - 30 ml Amchoor (mango powder) - 1/2 tsp Green chillies, chopped fine - 2 or 3 Method 1. Boil arbi in pressure cooker. At 1st whistle put off gas. Open cooker when the pressure subsides and peel away the arbi skin when arbi is cool enough. Slice each arbi into half. 2. Keep oil for heating on medium flame and while the oil heats up mix the besan & all spices in a bowl. 3. Coat each arbi thoroughly in this mixture & keep aside. 4. When oil is hot fry the arbi till golden brown. Keep aside 5. Next fry the onions, then the bell peppers just about half cooked to keep them crispy & crunchy. 6. Remove oil from wok. Put in all the fried veggies and on medium flame mix them well for 2-3 minutes. Check for salt and add if needed. Also, add the optional ingredients at this time if you wish and mix well. 7. Serve.
