Another MCO Special recipe whereby today we are cooking a simple Tuna Egg Fried Rice with Fish Roe (Ebiko) dish as most homes will have 1 or 2 cans of Tuna stored in their kitchen. As mentioned, feel free to substitute the tuna with other ingredients you may have available. Other good options are crab meat, salmon flakes, and shrimps. An important step is to coat well the pre-cooked rice with the eggs and you can choose to use more yolk for that creamy texture. One mistake I made during this video due to filming distractions was by adding the fish roe or Ebiko or Tobiko too early and overcooked it.
