Ingredients: Poha / Beaten rice / Flattened rice / Aval – 200g (White or brown) Jaggery - 200g Water - ½ cup Grated Coconut - 1 full Coconut bits - 2 handfuls Cashew nuts Black sesame seeds Ghee - 2 tbsp + 1 tbsp Cardamom - 4 (Crushed) Cumin powder - ½ tsp (Optional) Steps: Heat ghee in a pan and add coconut bits. Sauté until it turns golden. Remove and set aside. Add cashew nuts to the pan and fry well golden. Remove and set aside. Fry pottukadala also, if using. Set aside the ghee as well. Melt jaggery in half cup water in a pan. Stir continuously. Add grated coconut and mix well on medium flame. Add fried coconut bits and cashew nuts and mix well. Bring it to boil and then add poha. Mix well on medium flame. Add cardamom powder and mix well. Add cumin powder, if using. Add the set aside ghee along with 1 more tbsp ghee. Add sesame seeds and and mix well. Once the jaggery syrup becomes dry, switch off and remove. This tastes better the next day. This can be stored at room temperature for 2 weeks and in refrigerator, after that.
