Peradye Payasa Recipe by AK Kitchen | Paradi Payasa | ಪರಡಿ ಪಾಯಸ | ಪೇರಡ್ಯೆ ಪಾಯಸ Peradye Payasa is traditional recipe from the South Canara region of Karnataka. It is very familiar to the Udupi Mangalore region as Paradi Payasa. The name paradi or peradye is because we use the colander or jaradi to make it. This is one of the Traditional Festival sweet. INGREDIENTS: White rice - 1 cup Coconut- 1 No. Jaggery - 3/4 cup Cardamom powder - 1 tsp Preparation: 1.Rinse and soak white rice in 2 cups of water for around 2 hours. 2.Drain water from rice and take it in a blender. 3.Adding 1/4 cup of water, grind rice to fine puree. The consistency should be thick and shouldn't be flowing like. Transfer the it to a bowl. 4. Grind the coconut along with 1/4 cup of water and extract thick coconut milk. 5. Next add the squeezed coconut along with some more water and squeeze thin coconut milk as well. Keep 2 cups of coconut milk ready before you start making payasa 6. Heat a pan and add the prepared rice puree. Stir it well until batter becomes thick and comes together 7. Press the prepared batter in a Chakkuli maker 6. Meanwhile in a pan, take jaggery along with third extract of coconut milk (thin) and cook in medium flame. 6. When the jaggery dissolves , add the pressed (cooked) peradye. Mix well and cook for some more time. Next add thin(second extract) coconut milk and boil. 8. Finally add thick(First extract) coconut milk and cardamom powder. Bring it to boil and switch off. 9.Unique and delicious paradi payasa is ready to serve Notes * You can use replace homemade coconut milk by store bought one too. * The consistency of rice batter is very important. Add minimum water while grinding and obtain thick, non-flowing batter. * In case your batter turns thin, add some all purpose flour and make it thick.
