Prep time: 20 mins Cook time: 20 mins Servings: 5 Ingredients: 2 cup Mixed grams 4 cup Water (to soak grains) 4 cup Water (to pressure cook) 1 tsp salt 1 tsp Turmeric 2 tsp Oil for masala: 3 tsp Kashmiri chilli powder (not spicy) 4 tbsp Dried coconut (not desiccated) 1 tsp Cumin powder 1 tsp Garam masala 1 tsp Kolhapuri masala 1 tsp Coriander powder 2 tsp Kanda – Lasun masala 1 tsp Salt (adjust) 1 cup Water 3 tbsp Oil ½ Lemon (juice) handful of Coriander (chopped) for masala pav: Butter Reserved masala paste Chopped coriander 15 Pav / dinner rolls For garnish: Spicy Farsan Chopped Onion Chopped Coriander Lemon wedges Method: 1. Soak grain in enough water for 8-10 hours or overnight. 2. Pressure cook with turmeric salt and oil for 5 whistles. Keep it aside 3. Mix all dry masalas with water. In a pot add Oil and the prepared masala paste (reserve 2 tbsp for later use) 4. Simmer for 5 minutes stirring continuously. Add cooked sprouts, lemon juice. Stir and simmer for 10 more minutes. 5. Garnish with chopped coriander. 6. Melt some butter on a tawa, pour reserved masala and chopped coriander. Place slit pav on the masala, toast them lightly on both sides. 7. Take a serving plate. First pour ready usal in the dish and then pour red gravy (Kat) over it. 8. Thereafter, add Farsan and finely chopped onion. Garnish with chopped coriander. Drizzle lemon juice. 9. Serve it with Pav.
