We head to Whitby Goth Weekend 2022 for our scariest night of vanlife in the UK UK van life vloggers take their camper van conversion to North Yorkshire for the unique and incredible Whitby Goth Festival - celebrating all things Bram Stoker's Dracula Featured in this video is us @Those Happy Days (click to Subscribe if you like our channel We also meet up with the lovely @Northerners on Tour and @Urban Vanlife Pumpkin Curry Recipe Chopped Pumpkin (enough to fill a baking tray) Chopped Onion 2tsp Cumin 2tsp Ground Coriander 1/2 Tsp Turmeric 2 x red hot chillis finely sliced (we leave the seeds in) 1 tsp Cardamom Powder 1 tbsp Minced Garlic 1 tbsp Minced Ginger 300ml Veg Stock 200ml Plain Dairy Free Yoghurt 1 Heaped Tbsp Peanut Butter (or any nut butter) Fresh Coriander & Squeeze of Lime or Lemon Juice for Serving 1. Roast pumpkin in oven for 30-40mins or until cooked - we usually spay with a little oil, salt n pepper 2. Fry onions in a little oil so they start to soften, then add all the dry spices and cook for 5 more minutes 3. Now add chillis, cook for 2 minutes 4. Then add the garlic and ginger, and cook for a further minute 5. Add cooked pumpkin and cook/stir in spice paste for a couple of minutes 6. Now add veg stock and let simmer for 5 minutes 7. Then stir in the yoghurt and let simmer on low heat until you are ready to eat 8. Just before serving, stir in the nut butter. 9. ESSENTIAL to serve this dish with a good squeeze of lime/lemon and fresh chopped coriander on rice PUMPKIN SOUP Just fry roasted pumpkin & roasted onions in cumin seeds & fresh chopped chillies for a couple of minutes. Then 300ml of veg stock (or more if you prefer it runnier), and blend/puree. Season well, and add coconut milk 5 minutes before serving.
