INGREDIENTS 560 gr soft flour (10,5 -11% proteins) or 530 gr flour for all uses 2 tsps of sugar 2 eggs at room temperature 250 ml lukewarm milk 50 gr melted butter 8 gr (1 pack) dry yeast or 25 gr fresh yeast For the filling: 250 gr sugar 3 oranges the zest oil for frying DIRECTIONS In the bowl of the standing electric mixer pour the lukewarm milk and in it dissolve the dry yeast and 2 tsps of sugar. Add 3-4 TBsps of flour, mix and leave in a warm place for 10 minutes, to activate the yeast (bubbles on the surface). In a bowl, make the filling by mixing well 250 gr of sugar with the zest of 3 oranges until there is no white sugar. Put the bowl in the electric mixer with the hook and incorporate the eggs one by one (because the hook can be difficult to break, can whisk them first in a bowl and then throw them in the bowl). Continue with the flour, pouring it alternately with the melted butter and ending with the flour. Let it knead well for 7 minutes (if knead it with hands continue for 3 more minutes). I grease the bowl, place the dough inside, spread on top with a little olive oil, cover and leave it in a warm place to double its volume (in summer time it takes about 1 hour while in winter it takes twice as long). Can put it in a preheated oven at 30 * C to close it leaving the light on to maintain the temperature and put the dough there with the bowl to rise. When it doubles, punch the dough down to release the air, divide it into two equal parts and shaped the first one in a rectangle about 25x40 cm. Spread half of the flavored mixture of sugar with the orange, leaving 1 cm around. Gently press the sugar with the back of a spoon to stick to the dough. With a brush with water spread the dough around the perimeter to stick later. Roll the dough along its large side into a roll. Cut it into 1 cm slices and transfer them one by one on a baking sheet, leaving space between them so that they do not stick. Cover again and leave in a warm place for 30 minutes. Heat the oil in the pan over medium-high heat and put the rolls one by one, leaving them for about 3-3.5 minutes on each side. Once they are golden, turn them on the other side. When they are ready, drain them and take them out on a baking sheet in the pan one by one leaving space between so they will not stick. Before proceeding to the next ones, remove the remnants from the sugar left in the oil with a strainer. Serve them hot or cold the same day.
